Whitby Seafoods is to break into the cooked and peeled prawn sector by introducing a new range of prawns.
In a major development for the north east company, the new Cooked and Peeled Prawn collection has three versions based on the size of the prawns and measured in the number of prawns per pound: Extra Extra Large, 70-90 prawns per pound, Extra Large, 91-125, and Large,126-175.
The range is a combination of cold water prawns caught off Newfoundland, and warm water farmed prawns from Asia. They are frozen at source, shipped to the UK and processed by one of Whitby's partners.
Marketing and sales director Laura Troughton says: "Our research shows that prawns are the most popular shellfish and that 69 per cent of all caterers buy cold water prawns.
"If you break this down further, some 68 per cent of restaurants buy cold water prawns, and their popularity rises sharply to 84 per cent of pubs and 93 per cent of venues in the clubs and leisure sector."
Whitby Seafoods is targeting a 10 per cent slice of the foodservice seafood market, where it currently has no presence. It has nearly 20 per cent of the foodservice market for frozen coated scampi and this sector accounts for 7 per cent of the total seafood market, about 7,500 tonnes.
The UK's main seafood sales are dominated by cod, haddock and salmon, which have 59 per cent of sales. The peeled prawn category sells over 11,000 tonnes a year and has a 10 per cent market share.
Cooked and Peeled Prawns will be joining the Whitby Seafood range of nearly twenty different products.
